Coconutty scallops & spinach

Today, I didn’t have time to cook… but I still managed to do this:

What you need:

  • Scallops (4-6/people depending on your budget as well)
  • Coconut milk
  • 2 Tsp Coconut oil
  • Spinach
  • Garlic
  • Coriander (fresh or dry leaves), salt and pepper

Put about a spoon of coconut oil in a pan, and wait until it melts. Spread around the pan, and add the scallops to cook on low heat.

Whilst it is cooking, peel the garlic and dice it into small pieces. Wash the spinach (or open the bag if like me… you bought it ready to cook). In another pan, add a spoon of coconut oil, add the garlic and leave on normal heat for 30 seconds then add the spinach. Mix until the leaves look ready to eat (after they have lost enough water to look like the green mash that Popeye was eating… or maybe before that!).

Turn around the scallops once they become white until about 2mm from the bottom and leave on low heat.  Add the coconut milk, coriander, salt and pepper. Mix well so the coconut milk doesn’t stick or caramelise your pan.
