Greens and yellow – a summer omelette

For 2 people you need:

  • 4/6 eggs
  • 1 courgette
  • a bunch of fresh chives
  • 2 Tsp of olive oil
  • Salt & Pepper
  • Optional: garlic or onion, Feta cheese

If you are using garlic and/or onion, peel and dice them, then put them to cook in a pan with olive oil, before adding the courgette

If you are not using garlic and/or onion, wash and slice the courgette (no need to peel it), and put it to cook in a pan, after warming up the olive oil. Leave it to cook on low heat for about 30mn, until the slices are tender.

Crack the eggs into a mixing bowl and beat them well with a fork. Add salt and pepper.

Chop the chives

Add the omelette mix to the courgette, and move the pan to spread it evenly. Add the Feta cheese. Cook on low heat, then add the chives on top.

And… it’s ready !

You can serve it with Green leaves and gherkins for more decoration in the plate :)
